Fiona had seen a photograph of these scones and wanted me to share the recipe with readers of the Orkney News. I think that is a lovely idea so here it is.
Ingredients
- 225g/8oz self raising flour
- pinch of salt
- 55g/2oz margarine (I used Stork)
- 25g/1oz caster sugar
- 100 ml of Unsweetened almond milk ( I used Alpro )
- 50ml of Water.
- almond milk, to glaze
Method

Warm the oven to 200C/. Lightly grease a baking tray.

Mix together the flour and salt and rub in the margarine.

Stir in the sugar and then the milk and water to get a soft dough.

Turn on to a floured work surface and knead very lightly. Pat out to a round about ¾in thick. Use cut out scones and place on a baking tray. .

Brush the tops of the scones with the almond milk. Bake for around 15 minutes until well risen and golden.
