This week we are heading back to cookie land with these super quick, super easy, super tasty biscuits.
Peanut Butter & Oat Cookies
Ingredients
- 115g chunky peanut butter
- 115g butter
- 115g golden caster sugar
- 115g muscovado sugar or soft brown sugar
- 115g rolled oats
- 85g plain flour
- ½tsp vanilla extract
- ½tsp bicarb of soda
- ½tsp baking powder
- Pinch of salt
- 1 egg beaten
Method
- Beat the two butters together in a large bowl
- Add the sugars and combine
- Slowly add the egg and vanilla extract
- Sieve flour, bicarb of soda, baking powder and salt into the bowl and mix
- Finally add the oats and mix through
- Drop ½tsp of the mix onto a greased or papered tray, spacing well apart, about 9 per tray
- Bake in a pre heated oven 180°c, 375°f, Gas mark 4 for 10-12 minutes
- Remove from oven and allow to cool slightly in the tray before transferring to a cooling rack to harden
