Helen’s Home Cooking Video and Recipe for Summer Sausage Stew

This is a recipe that zings up the humble sausage allowing it to become the star of the dish. Tasty and extremely economical.

Summer Sausage Stew

Serves 4

  1. Heat the oil in a large pan.
  2. Add the sausages to brown.
  3. Add the onions and fry until translucent.
  4. Add the mushroom and red pepper and fry for a couple of moments.
  5. Add the tomatoes, garlic, herbs and chili flakes and stir to coat.
  6. Add the potatoes, water and the stock and bring to the boil.
  7. At this point add a glug of olive or rapeseed oil and the lemon juice.
  8. Cook for 45 mins.
  9. Remove the lid and boil hard until the sauce thickens.
  10. Taste and adjust to suit.
