Helen’s Home Cooking featuring Kenny’s Chinese Noodles

A quick and easy meal for 4 people.

Ingredients needed:

2 × 350g packs of Ready to Wok medium noodles. Empty into large pan and pour boiling water from kettle over them, stir to loosen them up and cover with lid. Do not heat pot.

 Get a medium sized microwavable bowl and add the following ingredients:  

 1 tsp ginger powder

1 tsp lemongrass powder

1 tsp garlic granules

1/2 tsp chilli flakes

1 tbls light/dark soy sauce

1 tbls fish sauce

4 mushrooms  chopped

1 chopped red/yellow pepper or half of  each

2 celery stick chopped small

2 carrots chopped small

3 spring onions chopped (keep 1 for  garnish later)

Add some leftover cooked meat if you wish. Heat in the microwave for 3 to 4 minutes. Remove and add 1 chicken stock cube and cover with boiling water from the kettle stir well to dissolve the cube. Add a good splash of sesame oil and a chopped raw spring onion. Drain noodles then return to pot add soup mixture to noodles and stir.  Serve in soup bowls and enjoy.

Note: You can add any kind of meat or fish to this dish and also spice it up more by adding more chilli and ginger.

19897504_10207876597993143_404989809_oNext week we shall be making fishcakes. This is so simple but a little time consuming so quite a good one to make in advance, say at the weekend to hold over for Monday night’s dinner.

For this you shall need, 1 pkt of frozen smoked haddock or cod, your choice, fresh parsley, 8-10 medium sized potatoes and breadcrumbs, I keep leftover home made bread for my breadcrumbs.

  1. It makes a change for me to comment on the recipe page but it has to be said that when Kenny does cook he makes a very good job of it and this recipe is no exception. It’s also very nice for me to get a night off.
