Helen’s Home Cooking, Indian Curry Video and Recipe

This is an easy Curry recipe, there are a lot of ingredients but once the spices are bought they last for ages or not depending if this becomes a regular. If you do not want to purchase all the spices just use a good quality Madras Curry Mix.

Indian Curry with Pilau Rice

(serves 4)

  • 350g approx of meat
  • 2 onions finely chopped
  • 3 or 4 cloves (more if you like the flavour)
  • 2 Cardamom pods
  • 1 tsp cumin seeds
  • 4 cloves of crushed garlic or 4tsp of garlic granules
  • 1 inch of ginger grated
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp turmeric
  • 1 tsp garam masala
  • 1tsp chilli powder
  • 1 tin of chopped tomatoes or half a dozen fresh tomatoes chopped
  • ½ tsp salt
  • 4 tbls oil
  1. Heat the oil in a large pan.
  2. Add Cloves, Cardamom Pods and Cumin Seeds fry for a minute or two.
  3. Add the onions and fry for 3-4 mins.
  4. Add the garlic and ginger and further fry for 2 mins stirring constantly.
  5.  Add the coriander powder, cumin powder, garam masala and chili and fry for a couple of mins until the oils start to seep out.
  6. Add the meat and cover with the spices and fry until the meat is sealed.
  7. Add the tomatoes, salt and the turmeric and bring to the boil.
  8. Turn back the heat and simmer for around 45 mins until the meat has cooked through, longer if you are using beef or lamb.

Pilau Rice

  • 2 cups of Basmati Rice
  • 6 cloves
  • 2 star anise or similar ie a nip of pernod or ouzo
  • 4 Cardamom Pods
  • 1 tsp turmeric
  • 25g butter
  • salt to taste
  • 3 cups of water
  1. Melt the butter in a large pan.
  2. Add the rice and stir to coat.
  3. Add the remaining ingredients and stir twice.
  4. Bring to the boil.
  5. Turn the heat down to minimum heat, cover and leave for 15 mins.
  6. Serve
