I don’t often write recipes but……our lovely Postie is visiting her family in Italy and posting pics.  on her FB of places she’s been and lovely meals she’s having.

She posted a pic. of a meal which looks like something we have a recipe for, but haven’t cooked for a while.

So, Mike cooked it for tea and it was as yummy as we remembered.

Here it is

Tuoni e Lampo ( Thunder & Lightning)

Serves two

Tin of cannellini beans (or similar)

1/3 pkt of pasta tubes

Sea salt

1 tblsp olive oil

1 large clove of garlic, crushed

Freshly ground black pepper

Chopped parsley.

Grated cheese to serve.

Drain and rinse the cannellini beans.

Cook the pasta in boiling salted water until it’s just tender, then drain it.  Meanwhile, heat the olive oil in a large saucepan and add the garlic, cannellini beans and pasta, with salt & pepper to taste, with a scattering of parsley at the last minute. Toss them gently together until everything is glossy with oil.

Serve immediately, with a good sprinkling of cheese
