Peanut Butter & Oat Cookies

Helen`s Peanut Butter & Oat Cookies


  • 115g chunky peanut butter
  • 115g butter
  • 115g golden caster sugar
  • 115g muscovado sugar or soft brown sugar
  • 115g rolled oats
  • 85g plain flour
  • ½tsp vanilla extract
  • ½tsp bicarb of soda
  • ½tsp baking powder
  • Pinch of salt
  • 1 egg beaten


  1. Beat the two butters together in a large bowl
  2. Add the sugars and combine
  3. Slowly add the egg and vanilla extract
  4. Sieve flour, bicarb of soda, baking powder and salt into the bowl and mix
  5. Finally add the oats and mix through
  6. Drop ½tsp of the mix onto a greased or papered tray, spacing well apart, about 9 per tray
  7. Bake in a pre heated oven 180°c, 375°f, Gas mark 4 for 10-12 minutes
  8. Remove from oven and allow to cool slightly in the tray before transferring to a cooling rack to harden
