Reading Peter Breingan’s story about West Kennet Long Barrow https://theorkneynews.scot/2021/12/05/west-kennet-long-barrow-1991/ , reminded me of our ‘pilgrimage’ to that area when we visited the places that he mentions.
It also reminded me of a recipe for a nourishing pie from the café in the village in the middle of the Avebury circle.
It’s always seemed strange to me that there’s a village right in the middle of the circle – what a place that must be to live!
Here’s the recipe for the pie – definitely seasonal comfort food…..
Sunset Shepherd’s Pie
- 1 clove of garlic, chopped
- 1 carrot, sliced
- Half a red and half a yellow pepper, sliced
- 2 tblsp. of oil
- Tin of cooked beans or lentils
- A sprig of rosemary, handful of parsley – or mixed herbs that you like
- Mashed potatoes to top
- 2 oz. butter/marge
- 4 oz. Red Leicester cheese, grated
- 2 tblsp. tomato puree
- 4 fresh tomatoes, sliced
- Salt & Pepa
Heat oven to 200 degrees.
Sauté vegetables in oil. When soft add beans, herbs & seasoning.
Prepare topping by mashing potato together with cheese, butter and puree – season to taste.
Put veg. and bean mixture in an oven-proof dish, top with sliced fresh tomato, then the potato mixture.
Bake for 25-30 minutes ‘til browned.
We haven’t had this pie for ages – I think the time is right!
